3 On-The-Go Breakfast Ideas for the Car – Lexington, KY

I love how every cereal, waffle, pancake, over-processed sprinkle-topped pastry and coffee commercial depicts breakfast time at a typical household.

A joyous rooster announces the sunrise as the scene cuts to a woman in a bathrobe, merrily enjoying the aroma of an artisanal mug of espresso. The camera pans to the delightful of swirl of creme atop the java, one that was surely made by her in-home barista. Her hair and makeup are somehow flawless as we see her sitting at her perfectly decorated kitchen table, sipping with the sweet finesse of a debutante who has all the time in the world. Following an unbelievably fast wardrobe change, we learn this beauty is a not only a business suit-clad working woman (who’s probably married to a dude that looks like a cross between Ryan Gosling and Ryan Reynolds) – she’s a mother of four darling children, too! They’re all neatly dressed – homework all done for the day, no doubt – and dining on the deliciously nutritious Nutella toast that mom has freshly whipped up. They even thank her with giant smiles, those little cherubs, making it to the bus stop with time to spare. Mom happily gets behind the wheel of her luxury sedan, and the thirty-second spot ends with her arriving to work five minutes early.

Oh, please. To quote one of my favorite recent viral videos: “Ain’t nobody got time for that.” This is an on-the-go, non-stop, 24/7-style era, and not everyone has an hour to spare in the A.M. to make a fluffy goat cheese frittata before work or school. Today’s hottest brunch spot is le car, a gourmet eatery on four wheels. Skip the always delicious (not nutritious) Taco Bell breakfast lineup or the granola bars that end up mostly on your lap instead of in your mouth (looking at you, Nature Valley), and opt for one of these make-ahead, portable meals that you and your kids can enjoy during your morning commute to school or work in Lexington.

3 On-The-Go Breakfast Ideas for the Car

Apple Sandwiches with Peanut Butter and Granola

  • 1 apple cored, sliced and cut into rings
  • Peanut butter
  • Granola

Instructions: Spread peanut butter on one apple slice. Sprinkle granola over peanut butter, topping with a second apple slice.

Freezer Breakfast Sandwiches

  • Eggs
  • English muffins
  • Sharp cheddar cheese
  • Ham, Canadian bacon or sausage

Instructions: Fry eggs, then assemble sandwiches using English muffins, cheese and breakfast meat of your choice. Cover with plastic wrap, then freeze. To reheat, remove the plastic and wrap in a paper towel. Microwave sandwich for one minute on 50% power, then flip over and heat for an extra minute on regular power.

Yogurt on a Stick

  • 1 six-ounce container of fruit-flavored yogurt with lid
  • Berries
  • Granola
  • Popsicle stick

Instructions: Open container of yogurt to stir and remove excess liquid. Add berries and granola to top of yogurt. Cut a slit in the lid for the popsicle stick, then replace the lid and insert halfway into yogurt. Freeze for at least five hours. To enjoy, run container under warm water until yogurt is released.

Let’s forget that aforementioned, lovely family who has it all together. I want you to picture yourself behind the wheel of an all-new 2015 Buick Verano or a 2015 Hyundai Tucson from Glenn Auto Mall at dawn, blissfully savoring every last bit of your tasty on-the-go breakfast. Barry White is playing through the premium sound system, and the air conditioning blowing through your hair is making you feel like a Brazillian model. You’re ready for your close-up and energized for the day, and this isn’t even Hollywood.

You show the rest of those commuters on the roads of Richmond, Danville, Nicholasville and Versailles how it’s done, superstar. Don’t forget to share some of your favorite car-friendly and on-the-go breakfast ideas with your friends at Glenn Auto Mall in the comments section below!
